Where are you from & how does that affect your work? I’m from Santa Barbara. It doesn’t affect my work directly.


Who are your biggest influences? My biggest influences are my mom and Grandpa Wilk.


What is the hardest part of the creation process?

The hardest part is just starting! And the 16-hour days for two years when net profit isn’t ever the goal.


What's your favorite item that you've created, and why?

My favorite item is the burger combo meal. The burger is huge and thick, served on a grilled football-shaped bun that allows for the delicious infusion of beef tallow while still being easy to eat fairly cleanly.


Why? Well, the nutrient-dense meat is the party, with tallow bringing the dessert on that burger. The feeling one gets even five hours later is why I do what I do. I want others to get that feeling and keep it!

When I know this food is transformational - mental clarity, body, and soul - it’s real food medicine for mental clarity and to help thwart cancer, diabetes, heart issues, and more.


What do you love most about Santa Barbara? There is beauty everywhere in this county - from the air quality and lush mountains and rolling hills to the ocean and the sea of people and community, seemingly focused on the right things: humanity and not profits.


What is a fun fact about yourself that other may not expect? I kayaked and then swam the massive river below the largest waterfall in the world, Victoria Falls, with crocodiles on both shores, each claiming 1/8 of a mile. The exit is the key, as crocodiles won’t venture into fast, deep water.


Rad! I'm jealous! Anything special you'd like to share? Yes - my four children. My son in particular, please pray for him. I do what I do every day for him. He will be okay! His name is Kyle and prayers are welcome. He is 27.
